Catering Team Leader

Here at Serco we have an exciting opportunity for a Catering Team Leader to join us at HMP Thameside based in London. Your main responsibilities will include assisting the Catering Manager in the delivery of catering services to the establishment as well as train and supervise the Chefs, Bistro Chef and Stores Officer and an offender work party.
You will be offering all of our prisoners the opportunity to have at least 1 hot meal each day, which is appropriate to any health specific diet and religious requirements. All catering staff are responsible for ensuring that all catering resources comply with all relevant public health and food hygiene legislations, perform quality checks on servery's before, during and after mealtimes and ensure the security and food safety of all foodstuffs by overseeing the deliveries to storage and distribution throughout the establishment.
As part of this you'll:
- Provide catering facilities that supports the delivery of the requirements of Prison Service Order PSI 44-2010 and catering manual.
- Assist in Prisoner movements and searches to and from the kitchen and wings.
- Provide meals with a hot or cold drink outside normal mealtimes if the prisoner has missed the meal through no fault of his own.
- Record and document all relevant paperwork to comply with food hygiene regulations, H.A.C.C.P and Company Policies.
- Liaise with local and national vendors in the sourcing, procuring and ordering of catering supplies and produce.
- Carry out and provide Special day and Religious events/menus.
What you'll need to do the role
First and foremost, you'll need to have worked in a similar role for a minimum of 1-2 years (within a custodial setting would be highly desirable but not essential), you need to possess a City & Guilds 706/1 & 706/2 or equivalent, Food Safety Level 2 (minimum), HACCP level 2 would also be advantageous.
The successful applicant will be creative, flexible, assertive, efficient and able to work to tight timescales. We are looking for someone that can communicate at all levels, build strong working relationships and be a successful part of an ever-growing team.
You will also be required to work a shift pattern which includes covering every other weekend.
