Overall, Purpose of the role 
  • We are looking for a Senior Head Chef Of Premium to lead our Premium Food operation and stadium experiences this includes Match days and Conference and Events and also develop new menus with a flourish, finesse, flair and up to date innovation for hospitality areas within the stadium by putting the guest experience the fore front of everything we do.
  • To Plan and organise the delivery of food service within Tottenham Hotspur stadium for football, NFL, C&E and any third-party events
  • Managing food preparation, menu specification, food budgets and labour budgets
  • Building a culinary team, then working to develop their passion and skills
  • Bringing together high pressure and prestigious events making sure that even the most demanding clients needs are met 
  • To always have Levy's UK's reputation for food quality at the top of your priorities
  • Responsible for compliance of Health, safety, food hygiene and COSHH regulation ensuring the Clubs reputation is protected.
  • To plan a budget culinary staff costs to ensure there is sufficient people for business needs
  • Drive sustainability where possible and always have this in the forefront of everything you do at the club 
 
Key Responsibilities 
Team Leadership
  • Confident to deliver stakeholder and staff communication throughout the business, ensuring the sharing of best practice and creativity through an approachable manner
  • Lead in the recruitment of a passionate and innovative venue culinary team. 
  • Recognise the value of the culinary team, take responsibility for the continual development of employees, using the progression of the team to implement a succession plan.
  • Successfully review the performance and capability of team members, taking action as required
  • Motivationally lead the culinary team, encouraging collaborative thinking and solidarity
  • People management of both permanent and fixed brigades across multiple kitchens on site to include effective leadership, recruitment, engagement, training, development, and motivation
  • Comfortable with HR procedures and following process
 
 
 
 Organisation/Logistics
  • Continually develop and strategically improve menus through planning measures and innovation
  • Accept the flexibility of an event and take all measures to ensure customer fulfilment through smooth delivery
  • Must be able to understand large numbers of catering and have a good logistics knowledge
 
  • Ensure all culinary offers strive to exceed the customer needs within the environment provided 
  • Recognize the limitations of an environment/event and constantly search for innovative solutions 
  • Ensure all culinary event detail is comprehensively communicated to achieve excellent delivery within a knowledgeable and motivated team
Finance 
  • Ensure portion control, correct preparation, and storage methods to avoid wastage and keep costs down
  • Plan and cost menus, for match days, third party events and hospitality requests ensuring that they achieve and maintain budgeted food costs 
  • Ensure all ordering is carried out with nominated suppliers 
  • Using YO1 suppliers as much as possible 
  • Ensure stock is maintained at appropriate levels 
  • Strive to work within budgets set, with the ability to justify financial spends 
  • Able to read and understand a P&L

Customer and Client Interaction
  • Embrace all customer feedback, with the view to continually develop and improve the food offering 
  • Confidently communicate with clients to enhance culinary offerings and exceed client requests.

  • Endorse the presence of the culinary team in a FOH capacity, encouraging customer communication and teamwork
  • Benefit from customer tastings, obtaining feedback and directly promoting the culinary skill and innovation of the team

  • The venue will be all about quality and innovation, where the Senior Head Chef of Premium works closely with the Regional Executive Head Chef and the Senior Head Chef of Retail on menu development and standards to deliver exceptional catering experiences 
  • Encourage the sharing of creative ideas, striving for best practice and achieving best COG
  • Implement change effectively and efficiently
  • Support and reward team members that portray forward thinking and innovation

Health & Safety
  • Be an advocate for HSE practices throughout the organisation, following all HSE guidelines and supporting the HSE team on match days to improve the guest's experience 
  • Lead the implementation of all relevant HSE procedures, acting as a motivator for the FOH and BOH team to work safely.
  • Take an active role in the training of HSE working practices throughout the unit, whilst maintaining the culinary teams HSE training records and risk assessments 
  • Proactively record safety walks a minimum of 2 per week

Key skills and Experience 
  • Relevant Industry qualifications 
  • Experience of managing a team of over 200
  • At least 2 years' experience in a Development role or Senior chef role 
  • Good people skills, good leadership, and organizational skills 
  • Passionate about food and customer service 
  •  Experience of menu planning
  • Knowledge of working to a budget and achieving GP/COG
  • Experience in a similar environment with multi outlet offerings and events venue
  • Food hygiene certified
  • A can-do attitude 
  • Able to illustrate how you keep pace with food trends and translate them to exciting and appealing menu and food offers
  • Proven track record in high quality environments and have the confidence and ability to demonstrate your own style with finesse and flair
  • You have a passion for fresh ingredients and enjoy creating stunning dishes time and time again
